Recipe Tips

- Chai tea is a sweet, spicy tea popular in India. The combination of black tea, milk and ground spices like cinnamon, nutmeg, cloves, ginger and cardamom gives it a warm, fragrant taste. Look for the instant spice chai latte mix in the tea and coffee aisle of the supermarket.

- To make it easier to remove shortbread, line pan with aluminum foil, extending foil over edges. When shortbread has cooled, use foil to lift shortbread from pan.

Cookies are rather nondescript. The chocolate frosting overwhelms the taste of chai. I would increase chai and decrease chocolate amounts by same amounts in recipe.
