6 ounces (3/4 cup) bulk chorizo or hot pork sausage
1/2 cup finely chopped red bell pepper
4 ounces (1 cup) Land O Lakes® Monterey Jack Cheese, shredded
1/4 cup finely chopped cilantro
1 (9.5- to 10-ounce) package scoop-shaped tortilla chips
Combine sausage and bell pepper in 10-inch skillet. Cook over medium heat, stirring occasionally, 8-10 minutes until sausage is browned. Cool slightly; stir in 1/2 cup cheese and cilantro.
Spoon about 1 tablespoon meat mixture into each tortilla chip. Sprinkle with cheese; place onto microwave-safe plate. Microwave 20-25 seconds until cheese begins to melt.
