Crumb Mixture
1 cup all-purpose flour
1/2 cup Land O Lakes® Butter, softened
1/4 cup sugar
Filling
3/4 cup sugar
1/2 cup all-purpose flour
2 large Land O Lakes® Eggs
1 1/2 teaspoons vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped dates
1/2 cup sweetened flaked coconut
1/2 cup chopped pecans
1/2 cup halved maraschino cherries, drained
STEP 1
Heat oven to 350°F.
STEP 2
Combine all crumb mixture ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press crumb mixture onto bottom of 8-inch square baking pan. Bake 15-20 minutes or until edges are lightly browned.
STEP 3
Combine 3/4 cup sugar, 1/2 cup flour, eggs, vanilla, baking powder and salt in same bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in all remaining ingredients by hand.
STEP 4
Pour mixture over hot, partially baked crust. Continue baking 25-30 minutes or until lightly browned and set. Cool completely; cut into bars. Store refrigerated..
