Cherry Custard Clafouti

This traditional country French dessert is made by topping a layer of fruit with batter. After baking this dessert is sometimes served hot with cream.

1 (16-ounce) can Bing cherries, well-drained

2 tablespoons sugar

1 cup milk

1/2 cup all-purpose flour

1/2 cup sugar

3 large Land O Lakes® Eggs

1 teaspoon vanilla

1/2 teaspoon almond extract

2 tablespoons powdered sugar

How to make

  1. STEP 1

    Heat oven to 350°F. Place cherries in greased 9-inch pie pan; sprinkle with 2 tablespoons sugar.

  2. STEP 2

    Place milk in 5-cup blender container; add all remaining ingredients except powdered sugar. Cover; blend at medium speed 1-2 minutes or until smooth. Pour over cherries.

  3. STEP 3

    Bake 40 -50 minutes or until knife inserted in center comes out clean. Sprinkle with powdered sugar. Serve warm. Store refrigerated.

I had to substitute rice drink for the milk and I used 1/4 cup of brown rice flour and 1/4 cup tapioca flour. Make sure you're using a gluten-free vanilla and almond extract and you have a delicious gluten/dairy free dessert.
