Ingredients

Dressing

1/4 cup
olive or vegetable oil
2 tablespoons
chopped fresh parsley
2 tablespoons
frozen orange juice concentrate , thawed
1 tablespoon
country-style Dijon mustard
1 tablespoon
honey
2 tablespoons
balsamic vinegar
1/4 teaspoon
coarse ground pepper

Salad

4 cups
torn romaine lettuce*
6 ounces (about 4 cups)
kale*, ribs and stems removed, torn or curly endive
1 1/2 cups
cubed cooked chicken
1 large (2 cups)
tart apple, cored, thinly sliced
1/2 cup
crumbled feta cheese
1/2 cup
coarsely chopped walnuts, toasted
 
*Substitute 4 cups torn mixed salad greens.

Directions

  1. Combine all dressing ingredients in jar with tight-fitting lid; shake well. Refrigerate at least 1 hour.
  2. Combine all salad ingredients except walnuts and cheese in large bowl. Shake dressing well; pour over salad. Toss lightly to coat.
  3. To serve, divide salad among 4 plates; sprinkle with walnuts and cheese.
