Chicken & Vegetables
2 tablespoons Land O Lakes® Butter
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 teaspoon finely chopped fresh garlic
1/4 cup chopped green onions
1 medium red, yellow or green bell pepper, coarsely chopped
8 ounces sugar snap peas or pea pods, tips and strings removed, cut in half
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup dry white wine
Rice
2 cups hot cooked wild rice
*Substitute water.
STEP 1
Melt butter in 10-inch skillet until sizzling; add chicken and garlic. Cook over medium-high heat, stirring often, 5-7 minutes or until chicken is no longer pink.
STEP 2
Stir in all remaining ingredients except wine and rice. Continue cooking, stirring often, 3-5 minutes or until vegetables are crisply tender.
STEP 3
Stir in wine. Continue cooking, stirring constantly, 1-2 minutes or until heated through. Serve over rice.
