Ingredients

Quesadillas

1 cup shredded cooked chicken

2/3 cup sour cream

1/3 cup mayonnaise

1/4 cup sliced green onions

1 1/2 cups shredded Cheddar cheese

1 (12- to 16-ounce) can black beans, rinsed, drained

2 tablespoons chopped green chiles, drained

12 (8-inch) flour tortillas

2 tablespoons Land O Lakes® Butter melted

Toppings

Sour cream

Salsa

Guacamole

Chopped olives

Sliced green onions

Chopped tomatoes

How to make

  1. STEP 1

    Heat oven to 375°F.

  2. STEP 2

    Combine all quesadilla ingredients in bowl except tortillas and butter.

  3. STEP 3

    Spread about 1/4 cup filling onto half of each tortilla; fold in half. Brush both sides of each tortilla with butter.

  4. STEP 4

    Place filled tortillas onto ungreased baking sheets. Bake 10-15 minutes or until heated through.

  5. STEP 5

    Cut each quesadilla into 3 wedges. Serve with desired toppings.

Tip #1

- Quesadillas can also be served as a main dish. Cut each filled tortilla in half; serve with desired toppings.

Very good. I make this often. Usually pan fry the queasadillas instead of using oven to brown them though.
