Ingredients

10 ounces vanilla-flavored candy coating (almond bark)

1/4 teaspoon mint extract

2 to 3 drops green food color

1 (9-ounce) package chocolate wafer cookies

3/4 cup mint chocolate chips  

1 teaspoon shortening

 *Substitute 3/4 cup real semi-sweet chocolate chips.

How to make

  1. STEP 1

    Line cookie sheets with waxed paper; set aside. Place candy coating in 2-quart saucepan. Cook over low heat, stirring occasionally, 3-4 minutes or until melted. Remove from heat. Stir in mint extract and food color.

  2. STEP 2

    Tipping saucepan slightly, dip chocolate wafers halfway into melted coating. Lightly shake off excess coating. Place coated wafers onto prepared cookie sheets.

  3. STEP 3

    Combine mint chocolate chips and shortening in 2-quart saucepan. Cook over low heat, stirring occasionally, 1-2 minutes or until smooth. Using spoon, drizzle melted chocolate over dipped cookies. Allow coating to set at room temperature or in refrigerator. Store cookies in tightly covered container at room temperature.
