Ingredients

Fish

3/4 to 1 pound catfish fillets

1 teaspoon salt-free herb and garlic seasoning

Vegetables

1/4 cup vegetable broth

1 cup small broccoli florets

1 small (1/2 cup) onion, chopped

1 yellow summer squash, thinly sliced

1 teaspoon salt-free herb and garlic seasoning

How to make

  1. STEP 1

    Heat gas grill on medium or charcoal grill until coals are ash white.

  2. STEP 2

    Rinse catfish fillets with cold water; do not pat dry. Sprinkle 1 teaspoon seasoning over fish; set aside.

  3. STEP 3

    Heat vegetable broth in 2-quart saucepan. Stir in all remaining ingredients. Cook over medium-high heat, stirring occasionally, 3-4 minutes or until liquid is absorbed. Keep warm.

  4. STEP 4

    Place fish onto grill; close lid. Grill, turning once, 6-8 minutes or until fish flakes with fork.

  5. STEP 5

    Place fish onto platter. Spoon warm vegetable mixture over fish.

When do I add the rest of the seasoning. It says to sprinkle 1 tsp over the fish and set aside. But the seasoning is listed twice. Is this an error? If not is it just used after the recipe is done? Thanks.

Hi Jim, you are correct - at the beginning of the recipe, you should sprinkle 1 teaspoon of the seasoning over the fish. Then, you add all remaining ingredients to the vegetable broth (including an additional 1 teaspoon of seasoning). Hope this helps!
