Cilantro and garlic flavor chicken that is served over a rice and bean mixture.
1 cup uncooked long grain rice
3 tablespoons Land O Lakes® Butter
1 pound boneless skinless chicken breasts, cut into chunks
1 tablespoon chopped fresh cilantro or parsley
1 tablespoons finely chopped fresh garlic
1 small (1/2 cup) onion, chopped
1 (15-ounce) can red beans, rinsed, drained
Cook rice according to package directions; keep warm.
Melt 2 tablespoons butter in 12-inch skillet until sizzling; add chicken, cilantro and garlic. Cook over medium-high heat, stirring occasionally, 9-10 minutes or until chicken is no longer pink. Remove chicken from skillet; keep warm.
Melt remaining butter in same skillet; add onion. Cook over medium-high heat, stirring occasionally, 3-4 minutes or until onion is softened.
Stir in beans and cooked rice. Continue cooking, stirring occasionally, 2-3 minutes or until heated through.
Spoon rice and bean mixture onto serving platter; top with chicken. Garnish with additional chopped cilantro, if desired. Serve with hot pepper sauce.
