Cranberry Pecan Pie

Ingredients

Crust

Single crust pie pastry

Filling

3/4 cup firmly packed brown sugar

3/4 cup dark corn syrup

1/4 cup Land O Lakes® Butter melted

3 large Land O Lakes® Eggs

1/8 teaspoon salt

1 cup sweetened dried cranberries

1 cup pecan halves

Garnish

Land O Lakes® Heavy Whipping Cream sweetened, whipped

Whole cranberries, if desired

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Place pastry in 9-inch pie pan. Crimp or flute crust; set aside.

  3. STEP 3

    Combine all filling ingredients except cranberries and pecans in bowl. Beat at low speed until well mixed. Stir in dried cranberries and pecans.

  4. STEP 4

    Pour filling into crust. Bake 50-55 minutes or until filling is set. If crust is browning too quickly, cover edge of crust with 2-inch strip of aluminum foil.

  5. STEP 5

    Garnish with whipped cream and cranberries, if desired. Store refrigerated.
