Ingredients

Crust

Single crust pie pastry

Filling

3/4 cup
firmly packed brown sugar
3/4 cup
dark corn syrup
1/4 cup
Land O Lakes® Butter, melted
3
large Land O Lakes® Eggs
1/8 teaspoon
salt
1 cup
sweetened dried cranberries
1 cup
pecan halves

Garnish

Land O Lakes® Heavy Whipping Cream, sweetened, whipped
Whole cranberries, if desired

Directions

  1. Heat oven to 350°F.
  2. Place pastry in 9-inch pie pan. Crimp or flute crust; set aside.
  3. Combine all filling ingredients except cranberries and pecans in bowl. Beat at low speed until well mixed. Stir in dried cranberries and pecans.
  4. Pour filling into crust. Bake 50-55 minutes or until filling is set. If crust is browning too quickly, cover edge of crust with 2-inch strip of aluminum foil.
  5. Garnish with whipped cream and cranberries, if desired. Store refrigerated.
