Ingredients

Crust

2/3 cup
all-purpose flour
1/3 cup
Land O Lakes® Butter, softened
2 tablespoons
sugar

Filling

1/2 cup
sweetened flaked coconut
1 (3.25-ounce) jar (2/3 cup)
macadamia nuts, coarsely chopped
1/2 cup
sweetened dried cranberries
1/3 cup
sugar

large Land O Lakes® Eggs, slightly beaten
1 teaspoon
vanilla
1/2 teaspoon
baking powder
1/4 teaspoon
salt

Glaze

1 cup
powdered sugar
1 teaspoon
freshly grated orange zest
2 to 3 tablespoons
orange juice

Directions

  1. Heat oven to 350°F. Combine all crust ingredients in small bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press into ungreased 8-inch square baking pan. Bake for 15 to 17 minutes or until lightly browned.
  2. Meanwhile, combine all filling ingredients in medium bowl until well mixed. Carefully spread filling over hot, partially baked crust. Bake for 22 to 27 minutes or until golden brown.
  3. Meanwhile, combine powdered sugar, orange zest and enough orange juice for desired glazing consistency in small bowl. Drizzle glaze over warm bars. Cool completely.

The flavor was fine, but I didn't get this puffy cake look to my bars....I even tried the recipe THREE times. Did not come out like the picture at all.
