Ingredients

3/4 cup
Land O Lakes® Butter, softened
1 cup
sugar
1
large Land O Lakes® Egg
3 (1-ounce) squares
unsweetened baking chocolate, melted, cooled slightly
1 2/3 cups
all-purpose flour
1 1/2 cups
finely chopped cashews
3/4 teaspoon
ground cinnamon
1/4 teaspoon
salt
Powdered sugar

Directions

  1. Heat oven to 350°F. Line cookie sheets with parchment paper; set aside.
  2. Combine butter and sugar in bowl; beat at medium speed until creamy. Add egg; continue beating until well mixed. Add melted chocolate; beat until well combined. Add flour, chopped cashews, cinnamon and salt; beat at low speed until dough forms.
  3. Shape dough into 1-inch balls. Place 2 inches apart onto prepared cookie sheets. Bake 10-12 minutes or until just set. Cool 1 minute on cookie sheet; roll cookies in powdered sugar. Place onto cooling rack. Cool completely. Roll in powdered sugar again. Store in food storage container with tight-fitting lid.

These were easy to make with a wonderful taste and texture. I stored them in the refrigerator and they held up well and were very good cold, as well.
