Ingredients

1 cup
Land O Lakes® Butter, softened
1/2 cup
firmly packed brown sugar
1/2 teaspoon
almond extract
2 cups
all-purpose flour
1/2 cup
dried tart cherries, finely chopped
2 ounces (1/2 cup)
dark or milk chocolate candy bar, finely chopped
 
1/4 cup
shelled pistachios, finely chopped

Directions

  1. Combine butter, brown sugar and almond extract in bowl. Beat at medium speed until well mixed. Add flour, cherries and chocolate. Continue beating at low speed until mixture leaves sides of bowl and forms dough.
  2. Divide dough in half; shape each half into 6x2-inch log. Place chopped pistachios onto waxed paper. Roll logs in pistachios to coat.
  3. Wrap each log in plastic food wrap; refrigerate at least 2 hours or up to 3 days.
  4. Heat oven to 375°F.
  5. Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake 8-9 minutes or until lightly browned on edges. Cool 1 minute on cookie sheet; remove to cooling racks.

A very good adult cookie. I used dried cranberries instead of dried cherries. Easy to make, just takes time to chop fruit, chocolate and pistachios.
