1 tablespoon Land O Lakes® Butter

2 large (1/4 cup) shallots

1 teaspoon sugar

1 (8-ounce) package cream cheese, softened

1/4 cup Land O Lakes® Butter, softened

1 cup shredded Cheddar cheese

1 cup shredded provolone cheese

2 tablespoons finely chopped fresh parsley

1 teaspoon country-style Dijon mustard, if desired

1/4 teaspoon salt

1/2 cup sliced almonds

Fresh rosemary sprigs, if desired

Assorted crackers

 *Substitute finely chopped onion.

How to make

  1. STEP 1

Melt 1 tablespoon butter in 10-inch skillet until sizzling; add shallots and sugar. Cook over medium heat, stirring occasionally, 6-8 minutes or until shallots are browned and caramelized. Immediately remove from heat. Cool 10 minutes.

  2. STEP 2

Combine shallot mixture and all remaining spread ingredients in bowl. Beat at medium speed until creamy. Cover; refrigerate 1 hour.

  3. STEP 3

Shape cheese mixture on waxed paper into pine cone shape. Place onto serving plate. Insert sliced almonds at an angle to resemble pine cone. Cover; refrigerate 2 hours or overnight to blend flavors.

  4. STEP 4

Garnish with rosemary sprigs just before serving, if desired. Serve with assorted crackers.

Tip #1

Purchase extra sliced almonds to select whole slices for inserting.

Although the recipe ststes it should look like pine cone, I was delighted when I saw the photo. It looks like a hedgehog! Put two peppercorns for eyes and half an olive for the nose, and voila! A hedgehog. I'm having a friend over for a mid-afternoon tea, and we will be partaking of hedgehog party spread.
