Ingredients

8 ounces (2 cups) uncooked dried penne pasta

1/2 cup sour cream

1/4 cup Land O Lakes® Half & Half

1 tablespoon white wine vinegar

2 tablespoons finely chopped onion

1/2 teaspoon dried dill weed

1/4 teaspoon salt

1/8 teaspoon pepper

2 cups skinned, boned, chopped deli rotisserie chicken

4 ounces (1 cup) crumbled feta cheese

1 medium (1 cup) tomato, seeded, chopped

1/2 medium (1 cup) English cucumber, chopped

1/4 cup pitted kalamata or ripe olives, halved

How to make

  1. STEP 1

    Cook pasta according to package directions. Drain; rinse with cold water. Set aside.

  2. STEP 2

    Combine sour cream, half & half, vinegar, onion, dill, salt and pepper in bowl; beat with whisk until smooth. Add cooked pasta; stir until well coated. Add all remaining ingredients; toss to coat.

Tip #1

- Any short pasta can be used for this salad. Rotini, bow-tie or ziti pasta will work.

Tip #2

- For even more flavor, use one of the flavored feta cheeses.

Tip #3

- Depending on the size of the chicken, 1 purchased rotisserie chicken will yield between 3 to 4 cups chopped chicken.
