1 cup semi-sweet chocolate chips
3/4 cup sugar
1/2 cup Land O Lakes® Light Butter, softened
1 large Land O Lakes® Egg
1 teaspoon vanilla
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups uncooked quick-cooking oats
*Substitute Land O Lakes® Butter.
Heat oven to 350°F.
Place 1/3 cup chocolate chips in microwave-safe bowl. Microwave, stirring every 15 seconds, until melted. Set aside.
Combine sugar and light butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add melted chocolate, egg and vanilla; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed. Stir in remaining chocolate chips and oats.
Drop dough by rounded teaspoonfuls onto greased cookie sheets. Bake 10-12 minutes or until set. (Do not overbake.) Cool 1 minute on cookie sheet; remove to cooling rack.
