Dark Chocolate Lava Drops

Serve these chocolate cookies warm for an indulgent treat. You can form the cookies ahead and bake them right before serving.

Ingredients

1/2 cup Land O Lakes® Butter

3 ounces bittersweet baking chocolate

3/4 cup sugar

1 large Land O Lakes® Egg

1 3/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

32 dark chocolate kiss-shaped candies, unwrapped

1/2 cup sparkling sanding sugar or sugar

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Place butter and bittersweet chocolate in bowl. Microwave 1-2 minutes, stirring every 30 seconds, until melted and smooth. Cool 10 minutes.

  3. STEP 3

    Add 3/4 cup sugar and egg to cooled chocolate mixture; beat at medium speed until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed.

  4. STEP 4

    Shape dough into 1-inch balls. Press 1 chocolate candy into each ball; form dough around candy to completely cover.

  5. STEP 5

    Place 1/2 cup sugar into bowl; roll balls in sugar. Place 1 inch apart onto lightly greased cookie sheets. Bake 8-10 minutes or until just set. (Do not overbake.) Cool 5 minutes on cookie sheet. Serve warm.

Tip #1

- To make ahead, shape cookies; roll in sugar. Place in container with tight-fitting lid. Store at room temperature up to 2 hours or refrigerate until ready to bake.

Tip #2

- To reheat baked cookies, place 2 cookies onto microwave-safe plate. Microwave 15-30 seconds or until centers are melted. Do not over heat.

Rather than using the kisses I used chocolate covered cherries. Wanted to test and see how they worked for Valentines Day. They were great came out with the molten cherry syrup and chocolate oozing out of them. When stuffing them I made a base of chopped walnuts for some and pecans for the others and they are fantastic. Definitely a Valentines surprise.

This really didn't come out well. The cookies were heavy, not crumbly, and the centers were not gooey. I tried baking them at a lower temperature and same thing. Overall this was alot of work and the cookies did not come out. Skip it!
