Creamy, eggnog cheesecake tops the rich butter crust of this nutmeg-scented cheesecake bar.

1/3 cup sugar
1/2 cup Land O Lakes® Butter, softened
1 1/2 cups all-purpose flour
1/2 teaspoon ground nutmeg
1/2 cup sugar
1/2 cup eggnog
2 (8-ounce) packages cream cheese, softened
3 large Land O Lakes® Eggs
1 tablespoon all-purpose flour
1/8 teaspoon ground nutmeg
*Substitute Land O Lakes® Fat Free Half & Half.
Heat oven to 350°F.
Combine 1/3 cup sugar and butter in bowl. Beat at medium speed until creamy. Add 1 1/2 cups flour and 1/2 teaspoon nutmeg; beat at low speed until well mixed. (Mixture will be crumbly.) Press crust mixture onto bottom of ungreased 13x9-inch baking pan. Bake 15-17 minutes.
Combine all filling ingredients except nutmeg in same bowl. Beat at medium speed, scraping bowl often, until mixture is creamy.
Spread filling over hot, partially baked crust; sprinkle with 1/8 teaspoon nutmeg. Continue baking 28-33 minutes or until set. Cool completely. Cut into bars with wet knife. Store refrigerated

I made this recipe with a couple adjustments for a party and it was a big hit! I added a teaspoon of rum extract to the filling to amp up the eggnog flavor. For the crust, I used 1.5 cups of ground ginger snaps, four tablespoons of melted butter, and three teaspoons sugar. I used a 9x9 since I couldn't find my 9x13. You may need more crust mixture in a larger pan depending on how thick you want the crust. Everyone loved the filling and people who said they don't like eggnog said they loved the bars. I'll be making this again for Christmas!
If you are a cheesecake lover and delight in the rich creamy taste of a glass of delicious eggnog....you are going to LOVE this recipe!!! It's simple and easy to make! Extremely difficult to mess up, unless you forget to set the timer, or something. It's perfect flavoring and texture...as is. I do highly suggest and recommend NOT compromising on the quality of eggnog you use. USE the the "good" stuff!!! I will mention it is a bit tricky to cut, so be patient. It's well worth it! OH...also, if your'e new to making this kind of desert...you'll know it's done if your "wet" knife comes clean after inserting into the center before removing it from the oven. It was well worth the cost of the recipe book JUST for this one recipe! It's become a Christmas tradition in our family. ENJOY!
