Ingredients

Cookie

1 1/2 cup
Land O Lakes® Butter, softened
1/2 cup
firmly packed brown sugar
1 (3.5-ounce) package
cook & serve butterscotch-flavored pudding and pie filling mix
1
large Land O Lakes® Egg
1 2/3 cups
all-purpose flour
1 teaspoon
ground ginger
1 1/2 teaspoons
ground cinnamon
1/2 teaspoon
baking soda

Decorations

Mini candy-coated chocolate pieces, candy buttons, chocolate chips, raisins, red cinnamon candies, etc.
White decorator icing or gel

Directions

  1. Heat oven to 350°F.
  2. Combine butter, brown sugar and pudding mix in bowl; beat at medium speed until creamy. Add egg; continue beating until well mixed. Add flour, ginger, cinnamon and baking soda; beat at low speed, scraping bowl often, until well mixed.
  3. Roll out dough, one-half at a time (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness. Cut with 3-inch gingerbread boy cookie cutter. Place 1 inch apart onto large ungreased cookie sheets.
  4. Add decorations for eyes, mouth and buttons as desired; press slightly into dough. Bake 9-12 minutes or until edges are lightly browned. Remove to cooling rack. Cool completely.
  5. Pipe edge of each cookie with white decorator icing, if desired.

Recipe Tips

If dough is sticky, refrigerate for up to 2 hours before using.
