1 1/2 cup Land O Lakes® Butter, softened
1/2 cup firmly packed brown sugar
1 (3.5-ounce) package cook & serve butterscotch-flavored pudding and pie filling mix
1 large Land O Lakes® Egg
1 2/3 cups all-purpose flour
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
Decorations
Mini candy-coated chocolate pieces, candy buttons, chocolate chips, raisins, red cinnamon candies, etc.
White decorator icing or gel
STEP 1
Heat oven to 350°F.
STEP 2
Combine butter, brown sugar and pudding mix in bowl; beat at medium speed until creamy. Add egg; continue beating until well mixed. Add flour, ginger, cinnamon and baking soda; beat at low speed, scraping bowl often, until well mixed.
STEP 3
Roll out dough, one-half at a time (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness. Cut with 3-inch gingerbread boy cookie cutter. Place 1 inch apart onto large ungreased cookie sheets.
STEP 4
Add decorations for eyes, mouth and buttons as desired; press slightly into dough. Bake 9-12 minutes or until edges are lightly browned. Remove to cooling rack. Cool completely.
STEP 5
Pipe edge of each cookie with white decorator icing, if desired.
If dough is sticky, refrigerate for up to 2 hours before using.
