Ingredients

Kabob

1/2 pound beef stir-fry strips

1/2 pound chicken stir-fry strips

1 small onion, cut into 8 wedges

1 large green, red and/or yellow bell pepper, cut into 1-inch pieces

1/2 cup mesquite or fajita sauce

8 (10-inch) flour tortillas, warmed

Toppings

Shredded lettuce

Salsa

Shredded Cheddar cheese

Sour cream

How to make

  1. STEP 1

    Heat gas grill on medium or charcoal grill until coals are ash white.

  2. STEP 2

    Meanwhile, alternately thread beef strips, chicken strips, onions and peppers on 8 metal skewers, leaving at least 1/2-inch space between items.

  3. STEP 3

    Place kabobs onto grill. Brush kabobs generously with mesquite sauce. Grill, turning once and brushing with mesquite sauce, 10-12 minutes or until beef reaches 145°F or desired doneness and chicken reaches 165°F and is no longer pink.

  4. STEP 4

    Place 1kabob in each tortilla. Serve with toppings as desired.

Tip #1

Authentic fajitas use beef skirt steak that has been marinated in a lime juice-red pepper marinade and then grilled. The steak is cut into thin slices and wrapped in flour tortillas with assorted toppings, such as grilled onions and peppers, guacamole and salsa. We've shortened the traditional preparation, but left the traditional taste by using pre-cut beef strips and mesquite sauce.
