Firecracker Fudge Cookies

These chocolate cookies are simply rolled in powdered sugar before baking for an easy topping.

1 (12-ounce) package (2 cups) real semi-sweet chocolate chips

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1 cup sugar

6 tablespoons Land O Lakes® Butter, softened

1 1/2 teaspoons vanilla

2 large Land O Lakes® Eggs

1/2 cup powdered sugar

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Microwave 1 cup chocolate chips in medium microwave-safe bowl 1 minute; stir. Microwave at additional 10-20 second intervals, stirring until smooth. Cool completely.

  3. STEP 3

    Combine flour, baking powder and salt in small bowl. Beat sugar, butter and vanilla in large bowl. Beat in melted chocolate. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture. Beat at low speed until well mixed. Stir in remaining chips. Cover; refrigerate just until firm.

  4. STEP 4

    Shape dough into 1 1/2-inch balls; roll in powdered sugar. Place onto ungreased baking sheets.

  5. STEP 5

    Bake 10-15 minutes or until sides are set but centers are still slightly soft. Let stand 2 minutes. Remove from cookie sheets.

These cookies came out divinely as well! I am not a huge chcolate-anything lover, but these are delicious. My family knew these cookies by an old-world Italian cookie recipe, and I knew these cookies as a chocolate crinkle cookie. Whatever you call these little delights, they are fudgey and rich and the powdered sugar gives them an added sweetness that makes the sun shine just a little brighter when you eat one...or two...or get the idea!
