Fresh Strawberry Syrup

Ingredients

1 pint strawberries,   hulled, halved, mashed slightly

1 cup sugar

3/4 cup light corn syrup

 *Substitute 1 (16-ounce bag frozen strawberries. Increase cooking time of strawberries to 15 minutes.

How to make

  1. STEP 1

    Place strawberries in 3-quart saucepan. Cook over medium heat, stirring occasionally, 6-8 minutes or until strawberries come to a full boil.

  2. STEP 2

    Line strainer with cheesecloth; place over large bowl. Pour hot strawberries into strainer mashing with back of spoon to extract juice; discard pulp. Return juice to pan. Add sugar and corn syrup. Cook over medium heat 9-10 minutes or until mixture comes to a full boil. Boil 1 minute.

  3. STEP 3

    Skim foam from top with large metal spoon. Store refrigerated. Serve over pancakes, waffles or desserts.

MIcrowave Directions: Place strawberries in 3-quart casserole. Microwave on HIGH, stirring every 2 minutes, until strawberries come to a full boil (4 to 5 minutes). Line strainer with cheesecloth; place over large bowl. Pour hot strawberries into strainer mashing with back of spoon to extract juice; discard pulp. Return to casserole. Add sugar and corn syrup. Microwave on HIGH, stirring every 2 minutes, until mixture comes to a full boil (3 to 6 minutes). Boil 1 minute. Skim foam from top with large metal spoon. Store refrigerated. Serve over pancakes, waffles or desserts.
