Ingredients

1 pound
lean ground beef
1 cup
uncooked instant rice
1/4 cup
water
2 (14 1/2-ounce) cans
chunky tomatoes with pepper and onions*
1/2 teaspoon
salt
5 (3/4-ounce) slices
Land O Lakes® Provolone Cheese, quartered
1 cup
tortilla chips
 
*Substitute 2 (14 1/2-ounce) cans any variety chunky tomatoes with seasonings.

Directions

  1. Cook ground beef in 10-inch skillet over medium-high heat, stirring occasionally, 5-8 minutes or until browned. Drain off fat.
  2. Stir in rice, water, tomatoes and salt. Continue cooking 5-6 minutes or until mixture comes to a boil. Reduce heat to low. Cover; cook, stirring occasionally, 5-6 minutes or until rice is tender.
  3. Stir in cheese; sprinkle with tortilla chips.

Easy and quick to make. Missing seasoning though. Once the beef mixture is drained I would add taco seasoning with the tomatoes, rice and water.
