Ingredients

32 cups plain popped popcorn

2 cups dry roasted peanuts, if desired

2 cups firmly packed brown sugar

1 cup Land O Lakes® Butter

1/2 cup light corn syrup

1 teaspoon salt

1 tablespoon vanilla

1 teaspoon baking soda

How to make

  1. STEP 1

    Heat oven to 200°F.

  2. STEP 2

    Combine popcorn and peanuts, if desired, in large roasting pan; set aside.

  3. STEP 3

    Combine brown sugar, butter, corn syrup and salt in 3-quart saucepan. Cook over medium heat, stirring occasionally, 8-10 minutes or until mixture comes to a full boil. Continue cooking, stirring occasionally, 5 minutes.

  4. STEP 4

    Remove from heat; stir in vanilla and baking soda. Carefully pour hot syrup mixture over popcorn and peanuts in pan; stir until well coated.

  5. STEP 5

    Bake, stirring every 15 minutes, 1 hour or until caramel corn is crisp. Immediately place caramel corn onto waxed paper. Cool completely. Break into bite-sized pieces. Store in tightly covered container.

I have made this recipe every year for 5 years at Christmas to give away as gifts. Everyone loves it. I was glad to find it on your website, because I lost my recipe and needed to locate it this year.

Love this recipe!! its a very easy recipe to make, the hardest thing is baking it for a hour without eating it all when you take it out ever 15 minutes to stir.
