Grilled Portabella Mushroom Burgers

Portabella mushrooms lend themselves well to grilling as a vegetarian option for hamburgers.

Ingredients

2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt melted

1 tablespoon chopped fresh basil leaves  

1 tablespoon balsamic vinegar

2 teaspoons finely chopped fresh garlic

2 medium (about 4 inches in diameter) portabella mushrooms, stems and gills removed

2 slices onion

2 whole wheat hamburger buns, split

2 romaine lettuce leaves

2 slices tomato

 

 *Substitute 3/4 teaspoon dried basil leaves.

How to make

  1. STEP 1

    Heat gas grill to medium or charcoal grill until coals are ash white.

  2. STEP 2

    Combine Butter with Olive Oil & Sea Salt, basil, vinegar and garlic in small bowl. Brush butter mixture over mushrooms, onion and cut-sides of buns.

  3. STEP 3

    Place mushrooms and onions on grill. Grill, turning once and brushing with remaining butter mixture, 6-8 minutes or until mushrooms are tender.

  4. STEP 4

    Place buns on grill, cut-side down. Grill until toasted.

  5. STEP 5

    To serve, place lettuce on grilled bun; add grilled mushroom, tomato and onion slice.

Broiling Directions: Heat broiler. Brush butter mixture over mushrooms, onion and cut-sides of buns. Place mushrooms and onions on broiler pan. Broil 6 to 8 inches from heat, turning once and brushing with remaining butter mixture, 6-8 minutes or until mushrooms are tender. Place buns on broiler pan, cut-side up. Broil 6 to 8 inches from heat until toasted.

I broiled - nowhere to cook outside. The recipe was easy to follow. Cooking was quick and the end result was a welcome change from everyday burgers (not that there is anything wrong with everyday burgers!) Just sometimes it is nice to have something different.
