Ingredients

4 (8-inch)
flour tortillas
2 teaspoons
Land O Lakes® Butter, melted
1/4 cup
prepared pesto
1 cup
cooked chopped or shredded chicken
3
green onions, sliced
1 small
tomato, chopped
4 ounces (1 Cup)
shredded mozzarella cheese
4 ounces (1 cup)
shredded Cheddar cheese

Directions

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Brush 1 side of each tortilla with melted butter; place buttered-side down onto ungreased baking sheet. Spread 1 tablespoon pesto over each tortilla. Top with chicken, green onions and tomato. Sprinkle with cheese.
  3. Place pizzas onto grill. Close lid; grill 3-6 minutes or until cheese is melted and crust is crisp. Cut into wedges.

Recipe Tips

- Shred meat from a ready-to-eat whole deli rotisserie chicken to make preparation easy.

- Serve individual pizzas for a light meal, or serve a platter of wedges for appetizers.

It's simple and quick to make, healthy and taste delicious. We keep bags of baked chicken or turkey in our freezer along with pesto. But, if we are out, I just broil or grill a chicken breast. I have not changed any ingredients except to sometimes add mushrooms or black olives.
