Grilled Salmon With Zucchini Relish

Ingredients

Relish

1 medium (1 cup) zucchini, chopped

1 small (1/2 cup) onion, chopped

1 tablespoon sugar

1 tablespoon chopped fresh basil leaves

2 tablespoons chopped red bell pepper

2 tablespoons lemon juice

1/4 teaspoon salt

1/4 teaspoon pepper

Sauce

3 tablespoons Land O Lakes® Butter melted

2 tablespoons chopped fresh basil leaves

1 tablespoon lemon juice

Salmon

4 (6-ounce) salmon steaks

How to make

  1. STEP 1

    Combine all relish ingredients in medium bowl; mix well. Cover; refrigerate until serving time.

  2. STEP 2

    Heat 1 side of gas grill to medium or charcoal grill until coals are ash white; place coals to 1 side in charcoal grill. Make aluminum foil drip pan; place opposite coals.

  3. STEP 3

    Stir together all sauce ingredients in small bowl. Brush both sides of salmon steaks with sauce.

  4. STEP 4

    Place fish on grill over drip pan. Cover; grill, turning and brushing with sauce once, 15-20 minutes or until fish flakes with fork. Serve with relish.
