Salsa
1/4 cup chopped fresh cilantro
1 (8-ounce) can pineapple tidbits or crushed pineapple, drained
1 jalapeño chile pepper, seeded, chopped
1 tablespoon apple jelly
Chicken
1 tablespoon Land O Lakes® Butter
2 tablespoons apple jelly
1 teaspoon lemon juice
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
6 (5-ounce) boneless skinless chicken breasts
STEP 1
Heat gas grill on medium or charcoal grill until coals are ash white. Combine all salsa ingredients in bowl. Cover; refrigerate until serving time.
STEP 2
Combine butter and 2 tablespoons apple jelly in small bowl. Microwave 15-20 seconds or until melted; stir. Add lemon juice, cumin, and garlic powder; mix well.
STEP 3
Place chicken breasts onto grill. Grill, turning once, 8-10 minutes or until lightly browned. Brush with butter mixture; continue grilling, brushing occasionally with butter mixture, 3-5 minutes or until internal temperature reaches at least 165°F. and juices run clear when pierced with a fork. Serve with salsa.
