Ingredients

2 3/4 cups
sugar
1 cup
water
3/4 cup
light corn syrup
1/4 cup
Land O Lakes® Butter
1 pound
Spanish peanuts
1 teaspoon
vanilla
1/4 teaspoon
baking soda

Directions

  1. Butter 2 15x10x1-inch baking pans; set aside.
  2. Place sugar, water and light corn syrup into saucepan. Bring to a boil over medium-high heat 8-10 minutes or until candy thermometer reaches 280°F or small amount of mixture dropped into ice water forms a hard but pliable strand.
  3. Add butter and peanuts; cook, stirring constantly, 4-5 minutes or until temperature reaches 300°F or small amount of mixture dropped into ice water forms a hard brittle strand. Remove from heat. Add vanilla and baking soda; stir until combined.
  4. Immediately pour mixture onto prepared baking sheets; spread evenly to about 1/4-inch thickness. Cool completely.
  5. Break into pieces. Store in container with tight-fitting lid.

You should use raw Spanish peanuts

This was SOOOO easy and SOOO fast! The only things I would suggest would be to add just a touch/pinch of salt to the recipe to get a bit of that salt flavor because the brown sugar is all I can taste, although I used salted cashews. But they are truly decadent!
