1 cup sour cream
1 (8-ounce) package cream cheese, softened
8 ounce slice (about 2 cups) Land O Lakes® Hot Pepper Monterey Jack Cheese shredded
1/4 cup chopped ripe olives
1 tablespoon sliced green onion
1 (2-ounce) jar diced pimiento, drained
8 (8-inch) flour tortillas
8 lettuce leaves
8 thin slices deli roast beef
Combine sour cream and cream cheese in small bowl. Beat at medium speed, scraping bowl often, until smooth. Stir in all remaining jalapeño spread ingredients by hand.
Spread 3 heaping tablespoons jalapeño spread on each tortilla. Layer with lettuce leaf and roast beef. Roll up tightly. Wrap in plastic food wrap. Refrigerate at least 2 hours.
Unwrap; cut each roll-up in half.
Serve remaining spread with chips or vegetable dippers.
