Ingredients

Muffins

2 cups
all-purpose flour
1/2 cup
sugar
2 medium (1 cup)
carrots, shredded
2 teaspoons
baking powder
1 teaspoon
salt
1/2 cup
Land O Lakes® Butter, melted
3/4 cup
milk
2
large Land O Lakes® Eggs, slightly beaten
1 teaspoon
vanilla

Topping

1/4 cup
honey
2 tablespoons
Land O Lakes® Butter

Directions

  1. Heat oven to 350°F. Grease or line 12-cup muffin pan with paper baking cups; set aside.
  2. Combine flour, sugar, carrots, baking powder and salt in bowl. Stir in all remaining muffin ingredients just until moistened.
  3. Spoon batter evenly into prepared muffin pan cups. Bake 22-26 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes.
  4. Combine honey and 2 tablespoons butter in bowl. Microwave 30-40 seconds or until butter is melted. Stir until well mixed. Dip warm muffins into honey mixture. Serve any remaining topping with muffins.

This is one of my favorite muffin recipes. I actually add the 1/4 cup honey into the batter and omit the topping. The muffins come out light and perfectly sweetened. My 2 year-old absolutely loves them!
