2 cups Italian-style dried croutons
2 cups shredded mozzarella cheese
1 medium (1 cup) zucchini, shredded
1 medium (1 cup) red bell pepper, cut into thin strips
1/3 cup chopped green onions
1 (14.5-ounce) can Italian-style diced tomatoes, drained
1 3/4 cups Land O Lakes® Half & Half
1/2 cup all-purpose flour
8 large Land O Lakes® Eggs
1 teaspoon salt
STEP 1
Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with no-stick cooking spray.
STEP 2
Place croutons in bottom of prepared baking dish; top with 1 cup cheese, zucchini, red pepper, green onions, tomatoes and remaining cheese.
STEP 3
Whisk together half & half and flour in medium bowl until smooth. Add eggs and salt; continue whisking until well mixed. Pour mixture over vegetables in baking dish. Bake 35-45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
