8 (4-ounce) boneless skinless chicken breast halves
1/3 cup chopped onion
1 (6-ounce) can tomato paste
1 (14.5-ounce) can diced tomatoes with basil, garlic and oregano
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup dried bread crumbs
1/4 cup chopped fresh parsley
2 tablespoons Land O Lakes® Butter, melted
6 ounces (1 1/2 cups) shredded mozzarella cheese
Heat oven to 350°F.
Place chicken into ungreased 13x9-inch baking dish or 3-quart shallow casserole.
Combine all sauce ingredients in bowl; spoon over chicken. Bake 30-40 minutes or until chicken reaches at least 165°F and juices run clear when pierced with a fork.
Combine bread crumbs, parsley and butter in bowl. Sprinkle cheese over chicken; top with bread crumb mixture. Continue baking 5-10 minutes or until chicken is fork tender and bread crumbs are browned.
- To make ahead, prepare up to 24 hours before baking. Cover with plastic food wrap and refrigerate. Baking time may need to be increased 5-10 minutes.
