2 quarts (8 cups) popped popcorn
1 cup pecan pieces
1 1/3 cups sweetened dried cranberries, coarsely chopped
1 cup sugar
1 cup light corn syrup
1 teaspoon vinegar
1/3 cup Land O Lakes® Butter
1 teaspoon vanilla
STEP 1
Place popcorn in large bowl or roasting pan. Add pecans and cranberries.
STEP 2
Combine sugar, corn syrup, and vinegar in heavy 2-quart saucepan. Cook over medium heat, stirring occasionally, 6-9 minutes or until sugar dissolves and mixture comes to a full boil.
STEP 3
Continue cooking, without stirring, 11-16 minutes or until candy thermometer reaches 280°F. or small amount of mixture dropped into ice water forms a hard but pliable strand. Remove from heat; stir in butter and vanilla.
STEP 4
Pour syrup over popcorn mixture. Stir until all ingredients are well coated. Spread onto large ungreased baking sheet. Cool completely.
STEP 5
Break into serving size pieces. Store in loosely covered container.
The popcorn mixture can also be shaped into large or small balls. Wrap in decorative food wrap and tie a holiday ribbon on them for gift giving.
