1 1/2 cups firmly packed brown sugar
1 cup Land O Lakes® Butter, softened
1 large Land O Lakes® Egg
2 teaspoons freshly grated lemon zest
2 cups uncooked quick cooking oats or old-fashioned oats
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup Stir-ins (see below)
Heat oven to 375°F.
Combine brown sugar, butter, egg, and lemon zest in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add all remaining ingredients except stir-ins. Beat at low speed until well mixed.
Stir in desired stir-ins.
Drop by tablespoonfuls onto ungreased cookie sheets. Bake 10-14 minutes or until lightly golden brown on edges. Cool 1 minute on cookie sheet; remove to cooling rack. Cool completely.
