1 cup all-purpose flour
1/2 cup Land O Lakes® Butter softened
1/4 cup sugar
3/4 cup sugar
2 large Land O Lakes® Eggs
2 tablespoons all-purpose flour
3 tablespoons lemon juice
1 teaspoon freshly grated lemon zest
1/4 teaspoon baking powder
Heat oven to 350°F.
Combine all crust ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Press onto bottom of ungreased 8-inch square baking pan. Bake 15-20 minutes or until edges are lightly browned.
Combine all filling ingredients except powdered sugar in bowl. Beat at low speed, scraping bowl often, until well mixed. Pour filling over hot, partially baked crust. Continue baking 18-20 minutes or until filling is set.
Sprinkle with powdered sugar while still warm and again when cool. Cut into bars.

Very good, buttery, but needs more lemon and a bit of salt! It could also use more filling. I added an extra half tablespoon of lemon juice and it still was not tart enough for me so next time I'll add a whole T more or 4 total and adjust the flour accordingly. I also added a 1/8 teaspoon salt in the filling and it is still sweet. Overall even if I might change things in the future, they are still amazing with my changes and I can't stop eating them warm. Unable and unwilling to wait for the cool down!!!
This is the first and only Lemon Bar recipe that I have been making since around 1980. I still have the original cut from a magazine advertisement. Everything is the same except my recipe calls for 1-1/3 cups of flour in the crust ingredients. Not sure how reviewer Jennifer made her bars without eggs though. It clearly states in the ingredients "2 Land O Lakes® Eggs."
