Ingredients

2/3 cup
fat free skim milk
1 tablespoon
instant coffee granules
1/3 cup
Land O Lakes® Butter, softened
3/4 cup
sugar
1
large Land O Lakes® Egg, beaten
1 teaspoon
vanilla
1 1/4 cups
all-purpose flour
1/3 cup
unsweetened cocoa
1 1/2 teaspoons
baking powder
1/4 teaspoon
salt
 
Powdered sugar

Directions

  1. Heat oven to 350°F. Grease 8-inch square baking pan; set aside.
  2. Combine milk and coffee granules in bowl; stir to dissolve. Set aside.
  3. Combine butter and sugar in another bowl. Beat at medium speed, scraping bowl often, until creamy. Add milk mixture, egg and vanilla; continue beating until well mixed. Add flour, cocoa, baking powder and salt; beat at low speed until well mixed.
  4. Pour batter into prepared pan. Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan.
  5. Cut cake into squares; sprinkle each serving with powdered sugar.
  6. Variation:Add 1/2 teaspoon ground cinnamon with dry ingredients.

Recipe Tips

- Freeze individual portions of this cake for lunches. Wrap in plastic food wrap. Place in individual resealable plastic freezer bags.

- Top cake squares with low-fat whipped topping and fruit.

- Dust dessert plates with cocoa powder and powdered sugar for a gourmet touch.

I added a little more cocoa powder and extra vanilla, and man, is it ever chocolately! I'll definitely make it again, but I'll stick to the recipe. :

This recipe is quick, simple & delicious! Just sweet enough to satisfy a craving. We like it served warm with vanilla bean ice cream. I will be making this one alot!

I think this is an easy and very tasty recipe. I used Land o Lakes light butter with canola oil making it even lower in fat. I like that it doesn't make a large cake, just enough!
