1 tablespoon Land O Lakes® Butter
1 pound beef sirloin steak, cut into 1-inch pieces
1/2 cup pitted kalamata olives, drained, halved
2 (14.5-ounce) cans diced tomatoes with basil, garlic and oregano, undrained
1 (14-ounce) can beef broth
1/2 cup uncooked dried orzo or rosamarina pasta
1/2 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
Fresh parsley sprigs, if desired
Melt butter in 4-quart saucepan until sizzling; add beef pieces. Cook over medium-high heat, stirring occasionally, 7-10 minutes or until browned.
Add all remaining ingredients exceptcheeses and parsley. Continue cooking 3-5 minutes or until mixture comes to a boil. Cook, stirring occasionally, 10-12 minutes or until orzo is tender.
Top each serving with cheeses. Garnish with parsley sprig, if desired.
