Ingredients

Meatballs

1 small (1/2 cup) onion, finely chopped

1 pound lean ground beef

1/4 cup plain bread crumbs

1 large Land O Lakes® Egg

1/2 teaspoon seasoning salt

1/2 teaspoon pepper

Waikiki Sauce

2 tablespoons Land O Lakes® Butter

1 small (3/4 cup) red bell pepper, chopped

1 (10- to 12-ounce) jar sweet and sour sauce

1 (8-ounce) can pineapple tidbits, undrained

2 tablespoons sweetened flaked coconut

Rice

Hot cooked rice or noodles

Sweetened flaked coconut, if desired

How to make

  1. STEP 1

    Heat oven to 400°F.

  2. STEP 2

    Combine all meatball ingredients in bowl; mix well.

  3. STEP 3

    Shape meatballs into 24 (1 1/4-inch) balls. Place into ungreased 13x9-inch baking dish. Bake 15-20 minutes or until center of meatballs are no longer pink. Drain off fat.

  4. STEP 4

    Melt butter in 3-quart saucepan until sizzling; add bell pepper. Cook over medium-high heat 2-3 minutes or until pepper is softened. Stir in sweet and sour sauce, pineapple with juice, coconut and cooked meatballs. Reduce heat to medium-low. Cook, stirring occasionally, until meatballs are heated through. Serve over rice or noodles. Garnish with coconut, if desired.

Tip #1

Variations:
Swedish Sauce: Prepare meatballs as directed. Omit Waikiki Sauce. Combine 1 (10 3/4-ounce) can condensed cream of chicken soup, 1/2 cup sour cream, 1/2 cup milk and 1/2 teaspoon ground allspice in 2-quart saucepan. Cook over medium heat, stirring occasionally, 3-4 minutes or until smooth. Reduce heat to medium-low; add cooked meatballs. Cook, stirring occasionally, until meatballs are heated through.

Thai Curry Sauce:Prepare meatballs as directed. Omit Waikiki Sauce. Combine 1 cup light coconut milk, 2 tablespoons peanut butter, 2 tablespoons light soy sauce, 1 1/2 teaspoons curry powder and 1/4 to 1/2 teaspoon chili garlic sauce in 2-quart saucepan. Cook over medium heat, stirring occasionally, 3-4 minutes or until smooth. Reduce heat to medium-low;add cooked meatballs. Cook, stirring occasionally, until meatballs are heated through.

Tip #2

Meatballs can be frozen for up to 3 months in a resealable plastic freezer bag or container.
