Thick and chunky guacamole is easy to make using avocado, tomatoes, onions and chiles. It is a favorite topping for quesadillas.

Ingredients

4 medium
ripe avocados, pitted, peeled, chopped
1/2 cup
chopped fresh cilantro
1 medium (1 cup)
onion, chopped
2 medium (1 cup)
tomatoes, seeded, chopped
1 (4.5-ounce) can
chopped green chiles, drained
2 tablespoons
lime juice
1 teaspoon
salt
2 teaspoons
chopped jalapeño chile pepper

Directions

  1. Place avocado into bowl; mash slightly. Add all remaining ingredients; stir until well mixed. Cover; refrigerate until serving time.

Keep in mind the avocados in the guacamole will darken over time. This happens when the avocado or guacamole is exposed to air. A suggestion is to prepare the guacamole shortly before you want to serve it. Also, the addition of the lime juice to the guacamole mixture will slow down the darkening of the avocado in the guacamole. The lime or citrus addition will not prevent the darkening but only slow it up.
