Ingredients

2 tablespoons
Land O Lakes® Butter
1 teaspoon
finely chopped fresh garlic
1/2 teaspoon
salt
1/4 teaspoon
pepper
1 pound
pork tenderloin, sliced 1/4-inch thick
1 medium
onion, cut into eighths
3 cups
quartered cooked small new red potatoes
2 medium (1 cup)
carrots, thinly sliced
3 tablespoons
maple syrup
1 (10-ounce) package
frozen Italian green beans

Directions

  1. Melt butter in 10-inch skillet until sizzling; add garlic, salt and pepper. Stir in pork tenderloin slices and onion. Cook over high heat, stirring occasionally, until pork is lightly browned (5-7 minutes). Remove from skillet; keep warm.
  2. Add potatoes and carrots to same skillet. Reduce heat to medium-high. Cook, stirring occasionally, until potatoes are lightly browned (5-7 minutes). Stir in maple syrup.
  3. Return pork and onion to pan. Stir in beans. Cover; continue cooking, stirring occasionally, until beans are heated through (4-5 minutes). Serve immediately.

Next time I will add more tenderloin - hubby is a meat-eater and said this didn't have enough for him.
