Old-Fashioned Whole Wheat Bread Pudding

What a great use of leftover or stale bread. Serve this easy dessert on a chilly night, topped with your favorite flavor ice cream topping.

Ingredients

1/4 cup Land O Lakes® Butter

8 slices (4 cups) stale whole wheat bread, cubed

1/2 cup raisins

2 large Land O Lakes® Eggs, slightly beaten

2 cups fat free skim milk

1/2 cup sugar

2 teaspoons vanilla

1/4 teaspoon ground nutmeg

1/8 teaspoon salt

Powdered sugar, if desired

Maple syrup or caramel ice cream topping, if desired

How to make

  1. STEP 1

    Heat oven to 350°F. 

  2. STEP 2

    Melt butter in 2-quart ungreased casserole. Add bread cubes and raisins; toss to coat.

  3. STEP 3

    Beat eggs slightly in bowl. Add milk, sugar, vanilla, nutmeg and salt; mix well. Pour over bread cubes; stir to coat. Bake 45-55 minutes or until knife inserted near center comes out clean.

  4. STEP 4

    Sprinkle powdered sugar over warm pudding, if desired. Serve with maple syrup or ice cream topping, if desired. Store refrigerated.

Loved this recipe. Instead of nutmeg I used pumpkin pie spice. I also sprinkled some crushed up almonds before I put it in the oven and turned out great. Would recommend this recipe. Top with chia seeds and whipped cream.

It took me about 45minutes...I substituted cinnamon for the nutmeg then added a shot of cognac...great simple recipe..

Using white bread quartered, butter lightly every slice ( before dicing ) put marmalade on every 2nd slice, add raisins scattered between slices, mix 2 eggs, 1/2 tablespoon vanilla, 1/2 nutmeg, 1/2 cup caster sugar, & two cups of full fat milk, pour over bread till well soaked, top off with some more raisins, place in preheated oven & cook for 40 min @ 180, check after 30 min, serve with custard, & ice cream, Hmmmm

My daughter shared this recipe with me and I am so glad she did. We both made it the same day. I had all the ingredients and it was easy to make. I used cinnamon instead of nutmeg, brown sugar. It is so delicious. I sprinkled some confectioner's sugar on top. Pinned it already! Thank you for sharing. PS Baked for 55 mins, small convection oven.

Ovens differ; I baked it 35 minutes and prep time took a little longer because I crushed some walnuts and cubed the bread smaller.
