1/4 cup Land O Lakes® Butter
8 slices (4 cups) stale whole wheat bread, cubed
1/2 cup raisins
2 large Land O Lakes® Eggs slightly beaten
2 cups fat free skim milk
1/2 cup sugar
2 teaspoons vanilla
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
Powdered sugar, if desired
Maple syrup or caramel ice cream topping, if desired
Heat oven to 350°F.
Melt butter in 2-quart ungreased casserole. Add bread cubes and raisins; toss to coat.
Beat eggs slightly in bowl. Add milk, sugar, vanilla, nutmeg and salt; mix well. Pour over bread cubes; stir to coat. Bake 45-55 minutes or until knife inserted near center comes out clean.
Sprinkle powdered sugar over warm pudding, if desired. Serve with maple syrup or ice cream topping, if desired. Store refrigerated.

Loved this recipe. Instead of nutmeg I used pumpkin pie spice. I also sprinkled some crushed up almonds before I put it in the oven and turned out great. Would recommend this recipe. Top with chia seeds and whipped cream.
It took me about 45minutes...I substituted cinnamon for the nutmeg then added a shot of cognac...great simple recipe..
