Orange spiced gingerbread people - fun to make and decorate.

Ingredients

Cookie

2/3 cup
light molasses
1/3 cup
firmly packed brown sugar
1/3 cup
Land O Lakes® Butter, softened
1
large Land O Lakes® Egg
2 teaspoons
freshly grated orange zest
2 3/4 cups
all-purpose flour
1 teaspoon
ground ginger
1/2 teaspoon
baking soda
1/2 teaspoon
salt

Frosting

4 cups
powdered sugar
1/2 cup
Land O Lakes® Butter, softened
2 teaspoons
vanilla
3 to 4 tablespoons
milk
Food color, if desired
Decorator candies, if desired

Directions

  1. Combine molasses, brown sugar, 1/3 cup butter, egg and orange zest in bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add all remaining cookie ingredients. Beat, scraping bowl often, until well mixed. Divide dough into 2 equal portions; wrap in plastic food wrap. Refrigerate until firm (at least 2 hours).
  2. Heat oven to 375°F
  3. Roll out dough on well floured surface, one portion at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 4 to 5-inch cookie cutters. Place 1 inch apart onto greased cookie sheets. Bake for 6 to 8 minutes or until no indentation remains when touched. Cool completely.
  4. Combine powdered sugar, butter and vanilla in medium bowl. Beat at low speed, gradually adding milk and scraping bowl often, until desired spreading consistency. Tint frosting with food color, if desired. Decorate cookies with frosting and decorator candies.

Recipe Tips

To pipe frosting, place into resealable plastic food bag. Cut tiny piece from 1 corner of bag. Decorate cookies by squeezing frosting through hole in bag.

This recipe made enough gingerbread people for me to share among four families and have enough left to hang on my tree. Not having access to 'light' molasses, I compromised with treacle and had to substitute LAND O LAKES butter with Irish creamery butter. The dough worked well after chilling overnight and the 'boys' cut out easily. Baking was easy and those little people were quickly devoured by real little people. I'd recommend using this recipe for other occasions as well as at Yuletide.
