Paradise Cookies

Paradise cookies are soft butter cookies, filled with pineapple, macadamia nuts and coconut - a true tropical delight!

Ingredients

3/4 cup sugar

1/2 cup Land O Lakes® Butter, softened

1 (8-ounce) can crushed pineapple in juice, well-drained

1 teaspoon vanilla

1 3/4 cups all-purpose flour

1 teaspoon baking powder

1 (3.25-ounce) jar (2/3 cup) macadamia nuts, chopped

3/4 cup sweetened flaked coconut

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine sugar and butter in large bowl. Beat at medium speed until creamy. Add pineapple and vanilla; continue beating until well mixed. Reduce speed to low; add flour and baking powder. Beat until well mixed. Stir in nuts and 1/4 cup coconut.

  3. STEP 3

    Shape dough into 1-inch balls; dip top of each cookie into remaining coconut. Place 2 inches apart onto ungreased cookie sheets. Bake for 12-15 minutes or until set. Let cool 2 minutes before removing from cookie sheets.

This excellent recipe is just as good using walnuts .

I just made these at the request of my mother. I found them to be OK. Overall I felt they lacked flavor. I was expecting a much bigger tropical flavor, but was really underwhelmed. I also found the dough very moist. I think I would refrigerate it before baking next time and perhaps add almond extract to punch it up a bit.

A friend made these and they were so good!!! Now I make them for club benefits, parties, and for home. They are moist and filled with coconut and a wonderful pineapple taste. Because of today's prices, I use walnuts.

Just to say a few words...I made these to try for a cookie exchange and I haven't been able to stop mkaing them. They are soft and moist and kids love them.
