Ingredients

Filling

1 pound lean ground beef or pork sausage  

1 cup chopped red bell pepper

1 large (1 cup) onion, chopped

1/2 cup sliced fresh mushrooms

1 (24-ounce) jar thick-style pasta sauce

1 (2.25-ounce) can sliced pitted ripe olives, drained

10 (3/4-ounce) slices Land O Lakes® Provolone Cheese

Topping

2 large Land O Lakes® Eggs room temperature

1 cup milk, room temperature

1 tablespoon Land O Lakes® Butter melted

1 cup all-purpose flour

1/2 teaspoon salt

1/2 cup grated Parmesan cheese

 

 *Substitute 8 ounces sliced pepperoni. Do not cook pepperoni; add with mushrooms.

How to make

  1. STEP 1

    Heat oven to 400°F.

  2. STEP 2

    Combine ground beef, bell pepper and onion in 12-inch skillet. Cook over medium-high heat, stirring occasionally, 6-8 minutes or until onion is softened and beef is browned. Drain off fat. Stir in mushrooms, pasta sauce and olives.

  3. STEP 3

    Spoon mixture into ungreased 13x9-inch baking pan. Top with cheese slices. Place into oven while preparing topping.

  4. STEP 4

    Beat eggs in bowl at medium speed, scraping bowl often, until light and lemon-colored. Add milk and melted butter; continue beating 1 minute. Stir in flour and salt, with wire whisk, until smooth. Pour mixture over hot filling, spreading to cover filling completely. Sprinkle with Parmesan cheese.

  5. STEP 5

    Bake 25-30 minutes or until top is puffed and golden brown. Do not open oven door during baking. Serve immediately.

- Thick pasta sauce is recommended.

Excellent recipe. I used more cheese than the recipe called for (we're in WI lol). I also added a bit of crushed red pepper to the meat mixture to give it some kick. I like this recipe because my mom made this 30 years ago when we were kids. With 7 people in out family, there were rarely leftovers and we would get so excited when mom said we were having "pop-up pizza" for supper. I love this recipe for a lot of reasons!

This was really easy, and there were no leftovers. Only took me six slices of deli cheese to cover the whole dish.
