Serve this potato-crusted egg dish to guests as an easy-to-prepare but impressive brunch dish.
1 tablespoon Land O Lakes® Butter
1 cup frozen diced potatoes with onions and peppers
8 large Land O Lakes® Eggs beaten
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper
1/2 cup shredded carrot
1 cup shredded Cheddar cheese
1/4 cup imitation bacon bits
Chopped fresh chives, if desired
Melt butter in 10-inch skillet until sizzling; add potatoes. Cook over medium heat 3 minutes, stirring often, until potatoes are thawed and tender. Reduce heat to medium-low.
Combine eggs, salt, dry mustard, pepper, carrot, and 1/2 cup cheese in medium bowl. Pour over potatoes. Cover; cook 12-15 minutes or until center is almost set. Sprinkle with remaining cheese and bacon bits. Remove from heat. Cover; let stand 2-3 minutes or until cheese is melted.
Cut into 6 wedges. Sprinkle with chives, if desired.
Imitation bacon bits are smoky and salty tasting just like real bacon, but are made from soy protein and do not contain animal products. Four slices of crisply cooked crumbled bacon can be used if you prefer.

This recipe is quick and delicious. I've had to make it at least once a week since I first tried it. It is also great left over and warmed up the next morning for breakfast. I usually do it for dinner with a salad.
