Flavorful vegetables and ham are served over a bed of Parmesan noodles in this quick dinner recipe.

Ingredients

4 ounces (2 cups)
uncooked dried egg noodles
1/4 cup
Land O Lakes® Butter
2 tablespoons
freshly grated Parmesan cheese
1/4 cup
sliced 1/4-inch green onions
2 medium (2 cups)
zucchini, sliced 1/4-inch
1 teaspoon
finely chopped fresh garlic
1 cup
frozen whole kernel corn
6 ounces
cooked ham*, cut into 1 1/2x1/4-inch strips
1/4 teaspoon
salt
1/4 teaspoon
pepper
Freshly grated Parmesan cheese, if desired
 
*Substitute 6 ounces cooked link sausage, cut into 1/2-inch slices.

Directions

  1. Cook noodles according to package directions. Drain. Toss with 2 tablespoons butter and 2 tablespoons Parmesan cheese. Keep warm.
  2. Meanwhile, melt remaining butter in 10-inch skillet until sizzling; add green onions, zucchini and garlic. Cook over medium heat, stirring occasionally, 4 minutes.
  3. Stir in corn, ham, salt and pepper. Continue cooking, stirring occasionally, until zucchini is crisply tender and mixture is heated through (3-5 minutes). Serve over hot cooked noodles with additional Parmesan cheese, if desired.

I did do a couple of things different than the recipe but structurally left it in tact. I watch my fat and didn't want the pasta as I was looking for a tasty veggie dish. I found it! I skipped the pasta entirely (when I do add pasta I would do whole wheat to keep it hearty) and used a little olive oil instead of butter. My ham was salty so I only put enough for flavor. Same with the parmesan. YUM! A great side dish.

I have a family of 5 and I will be doubling this recipe the next time. Everyone wanted another serving and there was nothing left!
