Pork Chops Stuffed with Corn Salsa

Ingredients

Stuffing/Salsa

1/4 cup chopped fresh cilantro or parsley

1 medium (1 cup) red bell pepper, coarsely chopped

1/2 medium red onion, thinly sliced, separated into rings

1 (10-ounce) package frozen whole kernel corn, thawed, drained

2 tablespoons Land O Lakes® Butter, melted

2 tablespoons cider vinegar

1/2 teaspoon ground cumin

1/4 teaspoon salt

1/4 teaspoon coarse ground pepper

6 (1-inch thick) pork chops

Salt

Coarse ground pepper

How to make

  1. STEP 1

    Heat gas grill on medium or charcoal grill until coals are ash white. Meanwhile, stir together all stuffing ingredients in medium bowl; mix well. Set aside.

  2. STEP 2

    Split each pork chop from outer edges toward bone, making pocket. Place about 2 tablespoons stuffing mixture into each pocket. Sprinkle chops with salt and pepper.

  3. STEP 3

    Place pork chops onto grill. Grill, turning occasionally, 20-30 minutes or until desired doneness. Serve remaining corn mixture over pork chops.
