1 medium (1 cup)
red bell pepper, coarsely chopped
1/2 medium

1 (10-ounce) package
frozen whole kernel corn, thawed, drained

ground cumin
1/4 teaspoon
salt
1/4 teaspoon
coarse ground pepper

Coarse ground pepper

Directions

  1. Heat gas grill on medium or charcoal grill until coals are ash white. Meanwhile, stir together all stuffing ingredients in medium bowl; mix well. Set aside.
  2. To prepare pork chops, split each pork chop from outer edges toward the bone, making a pocket. Place about 2 tablespoons stuffing mixture in each pocket. Sprinkle chops with salt and pepper.
  3. Place pork chops onto grill. Grill, turning occasionally, until desired doneness (20-30 minutes). Serve remaining corn mixture over pork chops.
