1/2 cup chopped green onions
1/2 cup light mayonnaise
1/3 cup chopped fresh cilantro
6 ounces (1 1/2 cups) Land O Lakes® Cheddar Cheese, shredded
1 (15.5-ounce) can pinto beans, rinsed, drained
1 (4-ounce) can chopped mild green chiles, drained
8 (8-inch) flour tortillas
2 tablespoons Land O Lakes® Butter, melted
Sour cream, if desired
Guacamole, if desired
Combine green onions, mayonnaise, cilantro, cheese, pinto beans and chiles in large bowl; mix well.
Brush 1 side of each tortilla with melted butter. Place butter-side down. Spread 1/3 cup filling mixture on half of each tortilla; fold tortilla over filling.
Heat 12-inch skillet or griddle on medium heat. Cook each quesadilla, turning once, 5-7 minutes or until lightly browned.
To serve, cut each quesadilla in half; serve with sour cream and guacamole, if desired.
